With more than twenty years of experience in professional kitchens and as the owner of two acclaimed Jackson, Wyoming restaurants—Trio An American Bistro and Local Restaurant & Bar—Paul brings a deep passion for the soulful craft of cooking.
Spending time with his grandmother in Memphis exposed Paul to the love of cooking at a young age. The soulful essence of southern food has always been deeply ingrained in his DNA. There’s nothing a biscuit can’t fix.
After selling out of his restaurants in Jackson, Wyoming, his family embarked on a nine-month journey in their sprinter van. They traveled through 30 states, explored numerous national parks, and savored the scenic backcountry roads along the way. It was during this adventure that they fell in love with the high mountain desert of Santa Fe.
Paul decided to try his hand at developing the family ranch in Lamy, NM and ski patrolling. However, he soon realized that he was missing the joy of sharing his passion for cooking with others. That’s when Fable was born—a culmination of all his experiences, infused with playful creativity, crafted cocktails, and elevated but casual service. Paul thrive's on working with locally and regionally sourced ingredients grown in the mountain soil and is thrilled to share his culinary fable with the Santa Fe community.
Paul met his partner, Jessica, at Trio, and they became the best of soulmates and friends. Becoming a father to his two incredible children, Olive and Harrison, has been the greatest joy of his life. When he's not in the kitchen, you can find him on the dirt, mountain biking or skiing.

Calvin Lazo

The first meal that Calvin remembers loving was his Grandma’s rice and beans. Shh… don’t tell his mom. From a young age he enjoyed helping in the kitchen, and knew before high school that he wanted a future in restaurants. He worked his way up in kitchens—from dishwasher to head chef.
Calvin met Jess and Paul through a friend when, rather than his original plan of moving to Portland, OR, he found himself working with them at Local Restaurant & Bar in Jackson, Wyoming, where he worked for a decade.
Calvin’s kitchen is organized, controlled chaos. His culinary tastes are broad, but distinctly Latin forward. He brings his experience working cohesively with Paul and is ready to impart his knowledge and expertise on the team at Fable.

New modern American restaurant to open in Eldorado.

After trading Jackson Hole, Wyo., for the Eldorado area south of Santa Fe about three years ago, Paul Wireman is poised to open a restaurant with a flexible menu that will offer meats and produce from the southern Rocky Mountains and a modern American style of cuisine.
